Good Morning!!


   I hope you all are doing well. Today is Friday so I thought I would share the weeks good Lap Band recipes. I played a lot with the recipes I love to make the lap band friendly and just a little healthier in general. I do hope that you ladies will try them out and like them as much as my family and I did. I will even add the whole recipe that way if you wanna steal it your more then welcome to!

* Meatloaf:
Instead of regular meatloaf that seems to dry out. I covered ours with thick cut bacon I got from the butcher. It was moist and delicious.
1lb ground beef
4 slices thick cut bacon
3 tblsp ketchup
1 tblsp minced onion
3 tblsp Breadcrumbs
1/2 tsp pepper
1/4 tsp salt
-Mix everything together and form into a loaf pan. Top with the bacon and make for 25-33 minutes at 350 degrees. Drain any excess grease and let set for 3-7 minutes. Serve and enjoy

*Smothered Pork Chops
So this is one of my favorite meals ever. Though sometimes the pork chops can become tough. So I decided to change the way of cooking a bit. I hope you enjoy these moist delicious chops as much as I did!
4 thin cut chops
2 cups water
1 can cream on mushroom soup
1 cup of milk
1/2 cup chopped mushrooms
salt and pepper
-In a skillet toss in pork chops and cover with 2 cups water. Bring to a boil and season with salt and pepper. Boil for 4 minutes. Drain water and mix in milk and cream of mushroom and mushrooms. Simmer for 5-7 minutes. Let rest for 3-5 minutes and enjoy.

*Noodle, veggie, pork toss
Fresh veggies of your choice (I used asparagus, green beans, corn and orange peppers)
2 left over smothered pork chops
1/2 lb pasta
1/2 cup shredded mozz cheese
-Bring water to a boil in a large pot with a pinch of salt. Toss in noodles and boil for 4 minutes then toss in chopped veggies and boil another 6-8 minutes. Drain veggies and pasta, toss in chopped up pork and cheese mix altogether and enjoy.

*Beer Butt Chicken made with Pepsi Lime
This is one of my favorite meals. My mom use to make it a lot. But, I am not a fan of beer we never have it in the house. We do however have a TON of soda since my Hubby drinks it at work. So we gave it a shot and it turned out better then the beer version.
1 can Pepsi Lime soda
1 whole chicken
1 tblsp butter
salt and pepper
-Rinse and pat dry the whole chicken. In a 9x9 casserole dish place the can of soda in the middle and put the chicken right over it so that it is standing up. Rub the chicken with the butter and season with salt and pepper. On the lowest rack in the oven bake the chicken at 400 degrees for 45 minutes to 1 hour and 15 minutes.

*Beer Butt Chicken Mac
So this is my quick fix meal of the week. I didn't feel like cooking and had a few leftovers form the week. So I made this and my lil family LOVED it.
1/2 lb pasta
2 cups leftover cheese sauce (just roue, milk, cheese and a dash of salt.)
1 cup beer butt chicken breast diced up
-Boil the pasta for 8-12 minutes. Drain and toss in cheese sauce and chicken. You may need a splash of milk it the cheese sauce is to thick. Toss altogether and season with pepper. Throw everything into a baking dish and top with shredded cheddar cheese bake just until the cheese is melted and bubbly then enjoy.

I hope you ladies enjoy these recipes as much as I did. All the meat was moist and every dish had a ton of flavor.
