I know this is my second post of the day but I really wanted to share a recipe I just made. It was amazing and light enough batter that it did not get stuck with my lap band. It tasted amazing and was filling yet not sickening full. My whole family enjoyed it and I will be making it again.
   What I made was beer battered cod (you can you tilapia but cod was on sale in my butcher case this week) along with fried zuccini. Now the zuccini I did 2 ways. One way I dipped them in the beer batter as well. Second I just lightly floured them and fried them. Both ways were delicious the beer batter just coats more and it fluffy.
I mixed a 24oz  can of Keyston Light beer with about 3-4 cups of flour.
I then whipped 1 egg with 1 cup of milk salt and pepper
Lastly I milked salt, pepper and 2 cups of flour together.
   I started with the zuccini so that I did not cross contaminate. I cut them thinly (about 1/4 inch) and dumped them into the egg wash. Then tossed them in the flour. Half I fried that way. The other half I dipped into the thick beer batter and then fried. I fried them all for about 4-6 minutes until golden brown. I put them on the draining plate and lightly salted them.
   I then cut the fish into the size pieces I preferred and dabbed them dry with a paper towel. I then dipped them in the flour. You leave out the egg was with these. Then into the beer batter. I fried them for about 4-6 minutes on each side depending on the size of steak I cut. Then once they were a golden to dark brown I put them on the drain plate and lightly salted them.
   This dinner was delicious. I really hope you give it a try and love it as much as we did. My portion equaled about a 1/4 of a cup. I zuccini and a little fish.

After eating I paired it with Gold Peak tea. My favorite drink ever. Of course I waited my 45minutes to 1 hour before drinking.



 
Wow, I saw you on Baby Gaga, I have been thinking about this surgery myself. But it is so expensive. The plate of food up top there, that is only like 3 bites, is that all you really can get down? Really not much food at all.
ReplyDeleteYes that is all I eat before I am full. I eat about 250-400 calories a day. I try to make most of it protein but find fun ways to spice it up.
