I made a lap band friendly pasta meal tonight. Lemonade chicken....My own recipe. It is delicious and tender and totally amazing... not to toot my own horn. It is great though. I haven't been able to eat all day except for a yogurt and pickle. So to taste the tangy sweet chicken and pasta was devine.
This is how I made it in case you wanna try it.
Homemade Lemonade
6 lemons juiced
1 lemon sliced
1/2 gallon water
1 c sugar dissolved in 1 c water on the stove (simple syrup)
Mix 2 cups lemonade with 2 chopped green onions, salt, pepper, garlic powder and 1 stock rosemary chopped. Marinate for at least 2 hours. (I marinated for 5 hours). Then bake the chicken at 350 for 25-32 minutes. Boil pasta with salt and garlic powder until tender, drain and let sit.
Make lemonade sauce with 1 cup lemonade, salt, pepper, 2 tsp fresh thyme, 1/2 tsp dissolved cornstarch and lemon zest.
Toss pasta, cheese (I used 6 cheese Italian and Parmesean), chicken and sauce together and serve. Delicious easy and easy on the lap band.
